EST is -5.

No matter where you are, it should be easy with that.

I have one concern about this, we have daylight savings, would that affect the time conversion?

Usually they take daylight savings time into consideration based on the time zones. I wouldn't think that would be a problem. Plus the variation will nothing more than an hour.
